PVB Cut Explanations

As all the different choices might be cumbersome, we have tried to break it down to hopefully clarify what you will get. It is much easier to tell you that you will get Steaks, Roast and Ribs and be done with it, but we would like to offer as many options as we can. As always, if you have any questions, please send us an email.

Basically, we offer 4 different products;

  1. Riley’s Ranch Special – is a pre-selected 1/4 of beef package
  2. Taylor’s Tender Special – is also a pre-selected 1/4 of beef package, with a few different selections than the # 1 package.
  3. Almost A Whole! – is our 1/2 a cow package and this is where you will be able to choose your own package cuts.
  4. Holy Cow – is our whole cow package, and just like the #3 package you will also be able to customize your own package of cuts.

You choose your preferred thickness of steaks… 1, 2, 3 inches.
You choose the number of steaks per package with a min. of 2.
You choose the size of your roasts – 2 - 3 lbs, 3 - 4 lbs, 4 - 5 lbs etc…
You can choose the size of Hamburger packages you get.

With our Rib Cuts you get Prime Rib or Rib steaks (choose bone in or out) but not both

With our Loin Cuts you get Porterhouse and T-bones or Boneless NY and Filets but not both

With our Chuck Cuts you get Roasts or Steaks, then you choose Bone-In or Boneless, if you choose Bone-In you will loose the Flatiron cut from the Bottom Round. A Flatiron cut is similar to a Tri-tip, maybe even better.

With our Cross Rib Cuts you get Roast or Steaks, either one or both.

With our Top Sirloin Cuts you get Steaks & Roast or Chateaubriand & Steaks… Chateau is a thick cut 2 inch center cut like a London broil.

With our Top Round Cuts you get up to 3 choices per ½ of animal…

With the Short Ribs you can get them, but if you don’t want them – the meat goes your Ground Beef weight.

The Soup Bones are just like the Short Ribs, you get them, but if you don’t want them – the meat goes to your GB weight.

The Stew Meat is cubed ½ inch by ½ inch, but if you don’t want it then this meat also goes to your GB weight.

Our Bottom Round Cuts;
Eye – You get either one or both of Roast & Cube Steak
Rump – You get either one or both Roast & Stir Fry/Fajita
Bottom – You get 1 or 2 choices of the following; Roast, Swiss Steak, Tenderized Steak (cubed or used for chicken fried) or Stir fry/fajita.
Sirloin Tip – You get either one or both Roast & Steaks
Cuts Included – Tri-tip, Flank steak, Skirt steak – keep in mind only 2 of each cuts are produced per animal – so depending on the package you choose you may get one of each or all three of these.
Flatiron Steak – This cut is compared to a Tri-tip, however is not available if you choose Bone-In Roasts or Steaks

Our Petite Tender Cut is included and compared to a small Tri-tip
